Welcome to an evening where nature’s bounty meets the wisdom of longevity. This farm-to-table dinner celebrates the vibrant flavors, traditions, and nourishing ingredients found in The Blue Zones — regions around the world known for their remarkable populations of centenarians and vibrant health.

Each dish has been thoughtfully crafted using fresh, seasonal, and locally sourced ingredients, honoring the principles of sustainable agriculture and mindful eating. Inspired by the diets and lifestyles that support long, healthy lives, this multi-dish experience invites you to savor wholesome, nutrient-rich foods prepared simply and beautifully.

Dishes:

Ikaria, Greece

A fresh Greek-inspired salad of tomatoes, herbs, red onions, cucumbers, olives, and fresh greens, tossed in a simple yet flavorful vinaigrette.

Sardinia, Italy

Italian pasta mixed with fresh roasted zucchini squash, garlic, onions, and tomatoes, olive oil, and topped with pecorino cheese. 

Nicoya, Costa Rica

A unique and refreshing agua fresca or "fresh water" beverage made from tropical fruit juices, water, and coconut milk representative of the healthy bounty found on the Nicoyan Peninsula.

Okinawa, Japan

Utilizing the Okinawan term "Chanpuru" which means "something mixed"-- a stir-fry of vegetables served with purple sweet potatoes on a bed of white rice. garnished with nori (seaweed) and sesame seeds.  

Loma Linda, California

A simple dessert--Medjool dates and walnut bites with a carob drizzle. No added sugars, and filled with plenty of nutritional plant ingredients derived from the teachings of Seventh-Day Adventists of Loma Linda.

Our summer salads are prepared weekly by our MACC Interns, who harvest, prepare, and package every salad. Fruits and vegetables are harvest the same morning that salads are made, to make sure our AUHSD staff and community members get the freshest ingredients possible.

MACC Salads with LOVE

Our team at the MACC works to make salads using fresh ingredients from the MACC. These salads are then provided to the staff at Magnolia High School.
